I would recommend to turn the plug braking off entirely. Did you say you put disc frobts on? You definately dont need it with those. The 00-04 NEVA retrofit discs are monsters.
I’m sure your suspension upgrades helped noticeably, but the problem with the 00-04 suspension is that you can only polish a turd so much.
The forward swing arm with single point of rotation is 80’s golf cart bs.
Word of advice, reinforce the steering coulmn mounts in the dash. Its just one or two crummy 1" tack welds on sheet metal. With what you describe as your terrain, bouncing and hanging on to the wheel, plus using it as a handle to climb up and in, those welds will tear and you will literally have the steering wheel, pod and column in your lap.
